Caribbean Pineapple Cornbread
A warm slice of buttery cornbread with sweet pineapple and toasted coconut, inspired by the flavors of the Caribbean.
Some dishes never leave the menu. This has been one of ours since the day Nue opened.
We start with rich, buttery cornbread, then fold in juicy pineapple chunks and finish each slice with toasted coconut. It's familiar enough to feel comforting, but just tropical enough to remind you you're somewhere warmer.
Corn, Pineapple & the Caribbean
Corn has been cultivated throughout the Americas for thousands of years, long before European arrival. Pineapples are native to South America and spread throughout the Caribbean, where Indigenous communities cultivated them for centuries.
As Indigenous ingredients met African and European baking traditions, dishes like Caribbean corn pone became regional favorites. Our cornbread takes inspiration from those flavors with sweet pineapple and toasted coconut.
Ingredient Spotlight
Fresh pineapple isn't just there for sweetness. As it bakes, its natural acidity brightens the rich butter and corn, while toasted coconut adds a warm, nutty finish that ties everything together.
Appetizer or Dessert?
That's the debate we hear all the time. Some guests order it before their meal with melting butter. Others save it until the end as dessert. Honestly, there's no wrong answer.
It's sweet enough to satisfy a dessert craving, but still savory enough to sit comfortably alongside the rest of your meal.
Why it's on our menu
Some dishes stay because they tell an incredible story. Others stay because guests simply won't let us take them away. This one has managed to do both. More than a decade later, it's still one of the first things many regulars order when they walk through our doors.
