Behind the Menu
Danish Dream Cake (Drømmekage)
One of Denmark's most beloved cakes, born from a teenager's baking competition and topped with an unforgettable layer of caramelized coconut.
Sometimes the best recipes don't come from famous chefs. They come from someone's grandmother.
In 1960, thirteen-year-old Jytte Andersen entered a baking competition in the small Danish town of Hjallerup using her grandmother's recipe. The cake became such a sensation that it was later published nationwide, eventually earning a place among Denmark's most beloved desserts.
What is Drømmekage?
Drømmekage literally translates to "Dream Cake." It's a light vanilla sponge topped with a warm layer of caramelized brown sugar and shredded coconut that's baked until golden and slightly crisp.
The contrast between the soft cake and the rich caramel topping is what has made it a Danish favorite for generations.
Our Twist
Traditional Danish homes often serve Dream Cake alongside a cup of coffee. At Nue, we balance its rich sweetness with a rotating house-made fruit compote. Depending on the season, that might feature local Pacific Northwest fruit, like our marionberry jam, adding a bright contrast to the caramelized topping.
Ingredient Spotlight
The signature topping is a simple combination of brown sugar, butter, and shredded coconut. As it bakes, the sugar caramelizes while the coconut lightly toasts, creating the chewy, slightly crisp layer that makes Drømmekage instantly recognizable throughout Denmark.
Why it's on our menu
We love serving dishes that feel personal, and Dream Cake is exactly that. Behind every slice is a family recipe that unexpectedly became part of an entire country's culinary identity. It's simple, nostalgic, and proof that sometimes the best desserts come from ordinary kitchens rather than famous bakeries.
